Everyone Loves a Little Whoopie

1 cup unbleached or all-purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup butter, at room temperature
1 lg egg white
1/2 cup 1% milk
3/4 cup marshmallow crème

Preheat oven to 425°F.

In a medium bowl, combine flour, cocoa, baking soda, and salt.

In a large bowl, combine sugar, butter, and egg white. With an electric mixer on medium speed, beat 2 minutes, or until fluffy. Stir in flour mixture, then milk, until just blended.

Drop dough by rounded tablespoons onto large, ungreased baking sheets to make 32 cookies. Bake 5 minutes, or until the tops spring back when lightly touched.

Place the baking sheets on racks to cool completely. Spoon about 2 teaspoons marshmallow on the bottoms of 16 cookies. Top with the remaining 16 cookies.

Makes 16 whoopie pies

Per pie: 97 calories, 2 g protein, 16 g carbohydrate, 3 g fat, 10 mg cholesterol, 1 g fiber, 160 mg sodium

TIP: They’ll keep in an airtight container for up to 3 days.

hi there... i made the recipe and they came out tasting amazing!! i was just wondering how do you keep them because i found that the marshmallow spread and then things got a little messy in the container i put them in... i put them in the fridge but i was wondering if you have a specific way to keep the cookies from sticking together and prevention of the marshmallow mess? thanks so much! i would definitely make them again!

I have made a oatmeal version of these instead of chocolate. Taste much better and fresher than the ones Little Debbie sells. And of course, they never last long! Recipe: Cream 1 1/2 c. Crisco and 2 2/3 c. brown supar. Add 4 eggs, on at a time, beating well after each addition. Beat in 2 tsp. vanilla. In separate bowl combine 2 1/2 c. flour, 2 tsp. cinnamon, 1 1/2 tsp. baking soda, 1 tsp. salt, and 1/2 tsp. nutmeg. Add to creamed mixture. Stir in 4 c. old fashioned oats. Drop by rounded teaspoonfuls onto lightly greased cookie sheets. Bake at 350* for 10-12 min. til golden brown. Cool. For filling, cream 3/4 c. Crisco, 3 c. confectioners sugar and 1 (7oz.) jar marshmallow creme. Add 1-3 Tb. milk to achieve spreading consistency. Spread filling over half of cookies and top with remaining halves. Makes 4 1/2 dozen. Enjoy!

These are called GOBS where I live & you can get pumpkin & banana flavors too at craft shows.  Mom & I used to bake 100 of them at Christmas time & then freeze them & pop 10 out at a time or so.  Not the low cal version of course :)  So now I'll have to see if she has some in her freezer...

Marshmallow Creme sounds way too sweet....   I'd probably try to tame it by folding in some unsweetened whipped cream or beaten egg whites, etc.

Here is an easy way, instead of the cocoa mix, use cake mixes, vanilla, or chocolate, very easy to make

 I used to make whoopie pies when I lived in Pennsylvania...whoopie pies are from the Amish.  There is also an oatmeal whoopie pie.  Instead of chocolate cookies, you make an oatmeal cookie instead.  Anyone have the recipe for oatmeal whoopie pies?
