No-Excuses Veggie Mix

1 bag (16 oz) frozen cauliflower florets
2 cups (half of 14-oz bag) frozen cut Italian green beans, cut green beans, or sugar snap peas
2 cups cherry tomatoes
1/2 cup dried whole-grain bread crumbs
1/3 cup grated Pecorino Romano cheese
1 Tbsp extra virgin olive oil
1 tsp minced garlic

Preheat oven to 400ºF. Coat a 13" × 9" baking dish with olive oil spray.

In a large saucepan, bring 1 cup of water to a boil. Add cauliflower and beans, cover, and cook 3 minutes, then drain. Distribute cauliflower, beans, and tomatoes evenly in the prepared dish.

In a small bowl, combine bread crumbs, cheese, oil, and garlic. Stir with a fork until blended. Sprinkle mixture evenly over vegetables.

Bake about 20 minutes, or until crumbs are golden brown.

Makes 8 servings

Per serving: 90 calories, 5 g protein, 10 g carbohydrate, 4 g fat, 5 mg cholesterol, 4 g fiber, 140 mg sodium

I love vegatables, and this looks like a great recipe.  Only 90 calories per serving.  Terrific!

This looks like a good meal for surprise guests.  Most of this could be in freezer or cabinet.  I try it this weekend and then the following weekend with variations.

I put this one together, but with my own twist.  I don't care for cooked tomatoes, so i changed them out and added a bit of onion, beefed up the amount of garlic, added baby carrots, mushrooms and just a sprinkling of corn and it was great.  I do agree also with some of the other ladies, adding some chicken or turkey would make it a complete meal.

I know when I'm on a diet I usually substitute bread  or croutons for crackers or corn flakes.  I crumble them up like you would if you were baking chicken with a crust in the oven.  I will try it just might work for this reciepe too.
